Sheppard’s Pie – Sweet Potato

We know it as Sheppard’s Pie but it was originally known as Cottage Pie. Cottage Pie typically referred to the version made with mutton although other meat was used. Cottage Pie was first made by blue collar workers who used their leftovers like roast beef (or mutton – hence the ‘Sheppard’s Pie’) and potatoes to make a quick and hearty meal. In this version we substitute ‘more nutritious’ sweet potatoes for white potatoes. (our original Sheppard’s Pie recipe here)

Ingredients
2 lb. ground beef
1/2 onion, diced
2-3 cloves garlic, diced
1-2 carrots, diced
2-3 stalks celery, diced
2 cups cremini mushrooms, sliced
1/2 cup peas
1/2 cup corn
2-4 tbsp unsalted butter
1/4 cup Worcestershire Sauce
oregano (preferably fresh) (1 tsp dry)
Peperoncino Fiocchi (hot pepper flakes) or 1 hot pepper, diced – optional
Salt and Pepper – to taste
Flat Leaf Parsley
olive oil
1/4 – 1/2 cup beef stock, a stout like Guinness or a bit of potato water

Mashed Potatoes
2-3 sweet potatoes potatoes, cut into small cubes and boiled (do NOT remove skins)
2 tbsp unsalted butter
1/4 cup Sour Cream
Salt and Pepper to taste
a bit of potato water

Top
Ricotta Salata

Directions
Potatoes (boil while making the filling)
1. Boil the cubed potatoes and remove from the water when soft (reserve 1-2 cups of the potato water)

2. Add butter and sour cream to the potatoes, then mash!

3. Add freshly chopped parsley, salt and pepper with some potato water (about 1/4 cup or so).

Filling
1. Sauté the onions, garlic and hot peppers in 2-3 tbsp olive oil.

2. When the onions begin to show transparency and the garlic softens add the diced carrots and celery.

3. When the carrots and celery soften, add 2 tbsp butter and the ground beef.

4. Let simmer for 5-10 minutes before adding the oregano (preferably fresh but dried will do), salt and pepper.

5. When the beef sufficiently cooks add the sliced mushrooms and some butter let simmer for 5-10 minutes.

6. add 1/4 cup Worcestershire Sauce.

7. Mix in the peas and corn, let simmer for 10-15 minutes.

8. Add 1/4 – 1/2 cup beef stock, a stout like Guinness or a bit of potato water and let simmer for 30-60 minutes.

Assembly
1. place meat in baking pan and add a bit more potato water (beef stock or a stout like Guinness).

2. cover with creamy mashed potatoes

3. add some shredded ricotta salt cheese

4. place in oven at 375F for 30-45 minutes or until cheese begins to brown
