Grilled ‘La Bombe’ Shrimp

La Bomba spicy grilled shrimp combined with this tangy sauce is delectable. This recipe works best if the shrimp are grilled on the BBQ but also works well if grilled on a hot cast iron pan.

Ingredients
1.5 – 2 lb Shrimp (20-25 medium sized)
1 cup cherry tomatoes, halved
1/8 cup capers, drained and rinsed
flat-leaf parsley
Salt and pepper – to taste
olive oil

Shrimp Marinade (Spicy Italian Shrimp Marinade)
Stage 1 – 1-2 hours
Shrimp, shelled and deveined (previously frozen, thawed cooked or uncooked)
2-3 cloves garlic, crushed and pressed
Olive Oil
White Wine – dry (Pinot Grigio)
Salsa di Peperoncino  / La Bomba – HOT!

Stage 2 – Last 10-min add
Lemon Juice (freshly squeezed)
Salt and Pepper

Starch
Risotto – Zucchini
Risotto – Basic
Brown Rice
Egg noodles

Directions
1. Marinade the shrimp, remove and put on skewers and season with a bit of salt and pepper, reserve marinade.

2. Heat sauce pan and toss in sliced cherry tomatoes

3. Let the cherry tomatoes blister and when broken down, add the capers and reserved marinade.

4. As the sauce reduces, taste and add salt and/or pepper
