Thai-Style Basil Chicken

Here’s an easy and healthy dish with an Asian flair. Since the popularity of Thai restaurants have grown over the past decade, several dishes seem to shine. Thai Basil chicken happens to be one of those extremely popular dishs.

Variations include pork, shrimp, or tofu but today we’ll stick with chicken. Try to find Thai Holy Basil, it’s really one of the key ingredients. You can substitute with other types of basil but the outcome will all be slightly different.

Ingredients
2-3 chicken breasts (roughly cut into pieces)
1/2 medium sized onion
2-3 cloves garlic, crushed
2 green bell peppers
sesame oil
Avocado oil
4 inches ginger root (2 inches grated and 2 inches sliced)
fresh basil, if you can get Thai Holy Basil)
1/2 lime juice
1 tsp sugar
1-6 Thai chili peppers (cooking reduces heat) – optional

Marinade
2 tbsp sesame oil
1 tbsp coconut oil
2 tbsp teriyaki
2 tbsp water
1 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp rice vinegar
2 tbsp ginger, grated
1/2 lime, juiced

Starch
Brown Rice
Jasmine Rice
Basmati Rice

Directions
1. Cook your rice and marinate chicken for 30-60 minutes. Remove from marinade, drain and reserve marinade for use later.

2. Heat a wok to medium/high heat, add 2 tbsp of avocado oil. When the oil is hot, add the ginger, onions, garlic and (optional) chilies. .

3. Stir fry them for about 20 seconds, when the onions get transparent is a good measure, don’t let them burn or get too dry. Toss in the chicken and cook on all sides

4. Once the chicken is cooked, toss in the bell peppers and let cook for a few minutes (don’t cook the peppers too much).

5. Add the marinade along with the tsp of sugar, mix well

6. Turn off the heat and fold in a handful of the holy basil leaves and the lime juice with the chicken (if using an electric stove, remove the wok from the burner). Since the basil only needs to cook for a few seconds, it will continue to wilt and cook from the existing heat of the chicken. (This step is important, if you cook the basil for too long it loses some of its flavor.
