Veal and Vegetable Skewers

A tender spin on a typical spiedini/kebob. Veal is a wonderful meat to work with as it’s flavorful and tender.

Ingredients
1- 2 lbs. veal stew meat
onion slices
vegetable slices – any combo of green pepper, red pepper, zucchini or other
garlic powder (if you don’t use crushed garlic in marinade)
Salt and Pepper to taste
Peperoncino Fiocchi (hot pepper flakes) – optional

Marinade / Baste
1 cup white wine (Pinot Grigio)
olive oil
Fresh rosemary
Garlic chives or 1 clove crushed garlic
1/2 lemon juice

Directions
1. Marinade veal chunks in wine, olive oil with finely chopped rosemary and garlic chives (or crushed garlic). Add the lemon juice boy 15 minutes before prepping on skewers.

2. Start BBQ! Prep meat on skewers. Add some more wine and olive oil to reserved marinade, it is now your baste. Top with some salt, pepper and hot pepper flakes (optional),

3.  Drink wine 🙂 and when BBQ is ready, place skewers on grill.
