Swiss Chard with Carrots and Celery

We love vegetables in Cucina Dello Zio, all kinds. The leafy green and often multi-colored Swiss Chard is highly nutritious and very tasty. We also love them with beans (Swiss Chard with Cannellini Beans and Swiss Chard with Romano Beans).
Ingredients
- 1 bunch of Swiss Chard
- 1 small onion, cut
- 2-3 cloves garlic, diced
- 3-4 carrots,sliced
- 3-4 celery stalks
- 1/2 cup white wine (Pinot Grigio)
- 1/2 lemon, juiced
- olive oil
- Salt and Pepper – to taste
- Peperoncino Fiocchi (hot pepper flakes) – optional
Directions
1. Using a large pan, sauté the onions, garlic and (optional) hot pepper flakes in 2-3 tbsp of olive oil.
2. When the onions begin to turn a translucent and the garlic softens, add the cut carrots and celery.
3. After a minute or two, as the carrots and celery soften, season with some salt and pepper.
4. Add the chopped swiss chard and mix well, let cook for a few minutes.
5. Add a cup of wine and let come to a simmer, taste and add salt and/or pepper if needed.
6. After about 3-5 minutes of simmering, add the lemon juice, let cook for a final minute or so.
